Risotto  This is a classic Italian dish which is as popular in Italy as pasta and pizza since the end of the 18th century. It is especially popular in the northern Italy. The first written remark of risotto dates back to the 19th century. The dish is simple and complex at the same time. To make it work, we need the right rice with a high level of starch, such as “Arborio” and “Carnaroli” for example. Rice should be fried in olive oil, added white dry wine and cooked by adding small portions of vegetable or chicken broth to the state of “Al dente”, which means “stacked to the tooth”, the rice inside should be a little undercooked. ‘At the end of cooking, add butter and Parmesan cheese’ says sushi chef Mykhailo Zmysny. Rice should be creamy. We prepare risotto with truffle paste in the Valentino restaurant, and you can make an order by adding anything you like. Sometimes we discuss with guests what they would like to add to this dish. And we always find great combinations and discover new flavors.
